Healthy Snacks for Weight Loss

Corn tortillas are baked with olive oil and spices to create a healthy version of the addictive snack chip.

Ingredients
  • 12 corn tortillas
  • 2 tablespoons olive oil
  • 1 tablespoon cumin
  • 1 tablespoon smoked paprika
  • 1 teaspoon salt
  • ½ teaspoon pepper

Instructions
  1. Pre-heat oven to 350 degrees and line two baking sheets with foil.
  2. Using a pizza slicer, cut tortillas into 8 triangles by cutting in quarters then eighths; place in a bowl.
  3. Drizzle olive oil and spices over tortilla triangles and mix well so all tortillas are evenly coated in oil and spices. Don’t be afraid to use your hands!
  4. Divide tortillas evenly between both baking sheets and spread out so that they are in an even layer.
  5. Bake for 20-25 minutes or until browned.
  6. Store in air tight container for up to 4 days.

                    Veggie Shots & Fruit Chasers
Ingredients
    Veggie Shots: (makes 2-3 shots)
  • 1/4 cup 100% Carrot Juice
  • 1 cup Baby Spinach (or kale)
  • Optional: 1 stalk Celery, 1 Bell Pepper (chopped/cut up, preferably green)

  • Fruit Chasers: (makes 3-4 chasers)
  • 1 cup Strawberries, chopped
  • 1/4 cup 100% Apple Juice
  • Optional: 1/2 Banana, 1/4 cup Pineapple
Instructions
  1. Blend the fruit chaser first, pour into shot glasses (there will be some leftover, so you can put it into a small cup)
  2. Blend the veggie shots (you don't have to wash the blender), pour into shot glasses
  3. SWIG:
  4. CHASE: (but if you really wanna be hardcore, skip this step)
Done.  You survived.

 Healthy Microwave Sweet Potatoes

Ingredients
  • 1 large sweet potato (it helps if it's long and skinny)
  • nonstick cooking spray
  • 2 teaspoons of your seasoning of choice (I love the Creole seasoning, but you can use whatever you love! Just salt, pepper and garlic powder is great too!)
Instructions
  1. VERY thinly slice the sweet potatoes. A mandolin (I got mine at Walmart for a cool $7) works best for this for uniformity purposes, but please PLEASE be careful if you use one. They are super sharp!
  2. Arrange the sweet potato slices on a microwave-safe plate.
  3. Spray lightly with nonstick spray, then sprinkle with 1 teaspoon of your seasonings.
  4. Turn the rounds over and repeat with the cooking spray and seasoning.
  5. Microwave for 10 minutes at 60% power.
  6. Carefully turn the rounds over again, then microwave for another 5-7 minutes at 70% power.
  7. Open the microwave door and walk away for 10 minutes. You want both the chips and the plate to be cool enough to handle!
  8. Enjoy!

Roasted Honey Cinnamon Chickpeas

Ingredients

15-ounce can organic garbanzo beans
1/2 tablespoon olive oil
1 tablespoon honey
1/2 teaspoon cinnamon
1/8 teaspoon nutmeg
1/8 teaspoon sea salt

Directions

  1. Preheat oven to 375 °F. Line a baking sheet with parchment paper or a   silicone mat.
  2. Drain and rinse the chickpeas in a colander. Place them on a towel to dry off.
  3. Spread chickpeas on a baking sheet in a single layer. Bake for approximately 45 minutes or until crispy. Test one, and if it's still soft, bake for longer.
