Easy Healthy Desserts

I love trying new low calorie, low fat, and low sugar desserts while I'm trying to lose weight.
 I try to find easy dessert recipes that include fruit. Here are some I have tried and love and some I'm going to try and know I will love.

I can't wait to try these with  fresh blueberries from our blueberry bush.  I made them with frozen berries and they were good, but I know the fresh ones won't have the the tough peeling the frozen ones sometimes have.   Not all of them are tough but it is annoying to have to deal with the tough skins. 
 Also, it is a pain to dip each blueberry with a toothpick, so I put the blueberries in the yogurt, stirred,  and used two plastic spoons to make  small balls.  It worked like a charm.  I also did the same thing with strawberries. It's so refreshing and delicious.
I love these homemade ice cream sandwiches.  I made a batch tonight.  I take a fork and mash the strawberries up before adding them to the cool whip.  I squish the insides a little to help cover the whole cracker.  Then I take a spoon and even out all 4 sides,  and freeze. I saw these made with a little yogurt with the cool whip.  I think that would make them creamier.  If they get any better, it won't be a good thing.  Love them!
Oh my goodness I've had frozen grapes, but this is a twist I think I could really like grapes dusted with jello. Artificial sweeteners are getting alot of negative attention.  You could use sugar free, but it takes such a small amount of jello to dust the grapes, I don't think it would make a huge difference if regular jello is used.  This is a must try recipe.
Love this easy recipe for parfait.  It doesn't get any better than fruit and oatmeal.  Recipe can be changed to put your favorite goodies in this good for you dessert. 
Oh my goodness how I love caramel.  These look divine and that's why I can't make them.  I know my self control good enough to know these are dangerous. If you can pace yourself, go for it. It has marshmallow, graham crackers, and  skinny cow cookies.

Buckeyes Chocolate Candy Recipe

Right before Christmas, my daughter and I make cookies and our all time favorite, Buckeyes.  I lost my original recipe so I had to find another one.  I think this one tastes better but It might be because I was so ready for them.

 I put them in mini cupcake liners which makes them look more festive.  Here is the recipe for Buckeyes.  Be prepared to fight yourself off of them daily.  Take my advice and give them away quickly.  Everyone loves them.

BUCKEYES RECIPE


  •  1 1/2 cups  Creamy Peanut Butter
  • Or 1 1/2 cups crunchy Peanut Butter
  • 1/2 cup butter, softened
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 3 cups powdered sugar
  • Chocolate Almond Bark

 With a mixer cream together peanut butter and butter.  Add extract and salt.  Add the powdered sugar one cup at the time.  When mixture can be rolled  into a ball, it is the right consistency.  You can add extra powdered sugar if it seems too sticky.
Roll into one inch balls and freeze on a cookie sheet.

While the buckeyes are freezing, melt almond bark chocolate in a double boiler.  Stick toothpicks into  the balls and dip in chocolate leaving a space at the top uncovered.  Pull the toothpick out and pinch the hole to smooth out  the candy.  You may have to refreeze the candy if it slides off the toothpick before you get it covered.  Once they have dried, you can put them into mini cupcake liners.  You will be able to stack the candy.
Get ready for the compliments, it is that good.

Apple Cinnamon Crisp Recipe

I always look forward to Autumn and the delicious apples that come with it.  I love the smell of my house when this apple crisp is in the oven. My family says it smells like home when they walk in the door.  As I'm writing this post, the smell is awesomeThere is something special about apples and brown sugar.

  I used canned apples (just because I had them) and fresh apples. Here is the recipe I came up with.

Mix the following ingredients: 

Filling:
  • 1 can apple cinnamon fried apples
  • 3 fresh apples, small to medium size
  • 1/4 cup brown sugar
  • 1 tablespoon lemon juice
  • 3 tablespoons flour or cornstarch
  • 1/3 cup raisins
Prep a 9x9 dish with a non stick spray and pour ingredients into the dish.

Topping:


  • 1 cup steel cut oatmeal
  • 1/4 cup brown sugar
  • 1/2 stick of butter melted
  • 1/3 cup flour
Mix ingredients together until they crumble.
Sprinkle crumbles on top of the filling and bake at 375 degrees for 40 minutes.
 Great with a scoop of ice cream or cool whip.
This dish was not around very long.  My husband really loved it.

Easy Bunny Cake


I had to share my daughters bunny cake she made for the egg hunt at our church.  We have made these for years and it is always a hit with the kids.

Use can frosting and candies like jelly beans and Twizzlers to decorate. Be sure to buy pull and peel Twizzlers,we didn't and had to cut the whiskers out with a knife.

Easy Healthy Desserts Recipes for Weight Loss

                    Blueberry Fluff
 

  • 3/4 cup cottage cheese ( I used 2%)
  • 1/2 cup frozen blueberries
  • 2 tsp stevia
  • 1/2 tsp vanilla

Place all ingredients in a blender and blend till smooth.
Garnish with a little Reddi Whip and a couple of blueberries. Enjoy! 



                        Chia Pudding
  • 2 cup unsweetened almond/coconut milk beverage (used Almond Breeze)
  • 1/2 cup fresh blueberries, blackberries or raspberries
  • 1/2 cup chia seeds
  • 2 Tbsp stevia (or sugar/honey to taste)
  • 1 tsp vanilla

Directions:

Mix everything in a mason jar. Shake well and place in the fridge. Shake again after half an hour. Refrigerate overnight or at least 6 hours. Garnish with berries before serving.


Peanut Butter Chocolate Chunk Pudding
  • 1/2 cup greek yogurt
  • 2 Tbsp peanut butter
  • 1 1/2 Tbsp stevia or to taste
  • 1/2 tsp vanilla
  • 2 Tbsp sugar free dark chocolate

Mix first 4 ingredients well. Stir in dark chocolate. Enjoy!!

  Stick it in the freezer for a little while to make ice cream!!!

                  Fruit and Yogurt

  1/2 cup plain Greek Yogurt, fat-free
    2 teaspoons freshly squeezed lemon juice
    1 tablespoon honey
    2 pears, cored, peeled, and cut into 1/2-inch cubes
    1 cup sliced strawberries
    2 apples, cored, and cut into 1/2-inch cubes
    1 cup seedless grapes, sliced in half lengthwise
    1/4 cups raisins
    1/4 cup diced celery


 Directions

In a small bowl, combine yogurt, lemon juice and honey. Cover yogurt mixture and refrigerate while preparing fruit. Best to eat 1-2 hours of preparing.

Ingredients
  •     ½ cup Greek yogurt, fat free, plain
  •     ¼ cup natural peanut butter, crunchy recommended
Directions
Combine all the ingredients in a small bowl, refrigerate until ready to eat.
Serve with your favorite fruit or veggie

Ingredients
  •     20 (1 pound) whole strawberries with
         leaves, rinsed, patted dry 
  •     1 cup dark chocolate chips
  •     1 tablespoon coconut oil
Directions

Add 1/2 cup water to bottom double boiler and bring to a simmer over medium heat. Add chocolate chips and coconut oil to the top boiler and stir until smooth and completely melted. Remove chocolate from heat and set aside.

Line a 15’x10’x1" cookie sheet with parchment paper. While holding strawberries by the leaves, dip into the chocolate, until all but the last 1/2", near the leaf, is covered. Lift and allow the excess chocolate to drip off. Set strawberries on parchment paper until all strawberries are covered.

For an extra special treat, immediately after excess chocolate drips from each strawberry, roll in dried coconut shreds or minced almonds.
The chocolate should set in about 30 minutes.
Chocolate Peanut Butter Protein Balls
 
Ingredients
  • 32g (1 scoop) Chocolate Whey Protein Powder
  • 1/2 tsp Dark Cocoa Powder (unsweetened)
  • 32g (2 tbs) Natural Peanut Butter (no sugar/salt/oil added)
  • 42g (2 tbs) Honey (or maple syrup/agave)
Instructions
  1. Put the protein powder and cocoa powder in a bowl and mix.
  2. Add the peanut butter and sweetener of choice and stir until moist and crumbly. Using your hands, form the mixture into one large ball and then divide that by how many servings you want. Eat immediately or refrigerate for later.
Notes
This recipe is: no bake, high protein, gluten free!


Banana Nut Bread with Nut Topping

I made this banana nut bread for my sweet husband.  He is my taste tester and he takes his job very seriously.  I had 3 banana nut bread recipes and I picked what I liked from each of them.  Then I added the brown sugar nut topping.  It is a easy banana nut bread recipe. 

 Ingredients:
  • 1 Stick of softened butter
  • 3/4 cups of granulated sugar
  • 2 eggs
  • 3 large bananas mashed
  • 2 cups of Jiffy Baking Mix
  • 1/4 cups chopped pecans
Topping
  • 1/4 cup chopped pecans
  • 2 T. brown sugar


Cream butter, granulated sugar
Add the eggs and bananas and mix well
Add the Jiffy mix and continue mixing
Fold in the nuts
Put in a loaf pan prepared with cooking spray
Top with the nuts & brown sugar (mix together)
Bake 350 degrees for 50 to 60 minutes


This is a moist  and delicious banana nut bread that won't stick around long.

Amazing 4 Ingredient Blonde Brownie Recipe



These 4 ingredients can make a pan of brownies that are Guaranteed Man Pleasers. I sent a container with my husband on a hunting trip this winter and he said all of his hunting buddies wanted the recipe.  They are simple and fast but no one has to know.  Here is the recipe:  

                                      Amazing Blonde Brownies

 
  •  2 Cups Bisquick or Jiffy Baking Mix
  •  2 Cups Brown Sugar
  •  4 Eggs
  •  4 Cups Chopped Nuts
                                        
                                                                
Put the Baking Mix, brown sugar, and eggs in a mixing bowl and beat with an electric mixer (about 2 or 3 minutes).  Stir in the chopped nuts.

 Pour in a 9x12 baking pan that has been sprayed with Pam.  Bake at 350 degrees for 30 minutes and here are the brownies.  I cooked mine 5 minutes too long.  They should be golden brown, but I honestly don't think anyone noticed.



Healthy Mug Cake In Your Microwave

Here is a healthy alternative for cake.  To make this delicious cake mix 1 box of Angel Food Cake mix and 1 box of cake mix of your choice.  Store in a container.  When you have a snack attack follow these instructions

3 Tablespoons of cake mix 
2 Tablespoons Water
1 Minute in the Microwave

Talk about portion control...this cake has it all          


 

Healthy Muffins and Free Printable Recipe Card



My Friend Jenifer Yates made these lowfat muffins and sent our family some of them.  They were delicious so I got her recipe for them. I have stayed away from sugar for 5 months now and was concerned about the sugar in the recipe.  She used Splenda in the place of sugar. It was so good to hold a muffin in my hands again.

How to Cheat at Making Pumpkin Tarts

I love this idea for those busy times you want something homemade but simply don't have the time.  The shells are store bought and so is the filling.  Buy a pumpkin or sweet potato pie and scoop out the filling and put into the tart shells.  Add a fancy topping and you look homemade.

Ice Cream Sandwiches 4th of July Treat for Kids

Love this easy idea for the 4th of July festivities.   Kids will love  putting  red, white and blue sprinkles on Ice cream sandwiches.  Use a dish with sprinkles and put the ice cream side into the dish.  Cover all sides and stick a ice cream stick in the end.  Add fun and colorful cupcake liners.  For less sprinkles add them to sandwiches by sprinkling on the sides.

Fake Daiquari Recipe for Kids

Sweet Strawberry daiquiri just for kids.  Let them join the 4th of July holiday festivities with these fun summer drinks

Ingredients:

  • 6 ice cubes
  • 16 strawberries
  • 1/2 cup frozen concentrated limeade
  • 1/2 cup water
 
Crush the ice cubes in a blender and then add the strawberries, limeade and water.  Pulse, pour into a decorative glass,  Add a sliced strawberry on the rim, and a straw and let the fun begin. When my kids were young I would buy the bottled mixes to make summer drinks.  This is a money saving recipe and much healthier.

Gooey Caramel Snickers Cake


I found a recipe for a snickers cake at Six Sisters Stuff.  I recently posted a snicker bar recipe but I couldn't resist this one for a snicker cake.  I love the simplicity of this recipe.  It uses German chocolate cake mix and Kraft caramels.  Oooy gooy goodness and pretty simple to make.  It has no topping but who needs it with all the good stuff in this cake.  Be sure to visit the site to get the instructions for this luscious chocolate cake.

Heavenly Homemade Snicker Bars

Snicker bar heaven! These homemade snicker bars are from a site called Brown Eyed Baker.  You can go there to get her step by step recipe to make these delicious bars.  The good part is no stove is needed.  This would be the perfect summer (fall, spring, and winter) dessert.   They would be good frozen too.  You could cut them into small  bite size pieces.  Portion control, unless you eat the whole recipe.

Cherry Pineapple Dump Cake Recipe

I just made a Cherry Pineapple Dump Cake.  Why this delicious cake is called dump cake I will never understand.  It is so good, and though easy to make, it certainly isn't dumped into the dish.  I made this dessert to take to a friend.  Why is it everything leaving your house smells so good and it is just begging for you to taste it...

Here is a step by step tutorial 
  In a mixing bowl add
    1 can of cherry pie filling
    1 can of crushed pineapple (drained)
Mix well and add to a greased or sprayed casserole dish


Next put a box of yellow cake mix(dry) on top and spread evenly.
 This is the secret to a beautiful cake...butter squares (1quarter).  Next time I will not line them up so neat but spread them over the top of the cake so i won't have that boxy look.
Bake at 350 degrees for 40 to 50 minutes until golden brown.  I used the broiler the last few minutes.  I got it a little browner than I would have liked.  Tip...never eat last night's left overs while you have anything on broil.


       Cherry Pineapple Dump Cake Recipe


1 can of cherry pie filling
1 can of crushed pineapple (drained)
1  box yellow cake mix
1  stick butter or margarine


Mix together pie filling and pineapple and put in the bottom of a greased casserole dish
Put dry cake mix on top and spread evenly
Cut butter into squares and place on top of cake mix

Cook at 350 degrees for 40 to 50 minutes.  Make sure the top is browned well to get that crunchy texture.






Layered Pumpkin Cheesecake

Love, love, love this recipe from Farm Chicks.  I'm making this to take to a Fall Festival this weekend.  See those layers, it's graham crackers.  What I'm going to do is to take a boxed cheesecake and add pumpkin pie filling to it and layer it with the graham crackers.  I can only see it working.... I'm always adding something to the plain cheesecake kits.  I'm so excited about this cake.
My husband is always telling me not to take something to a get together that I have never made before...I say  take risks, change things up, try something new.  Will update you after the festival...We will see who is right, him or me.

UPDATE I won runner up with my pumpkin cheesecake (Jello Cheesecake) that I added the pumpkin pie filling to.  The judge had a hard time deciding between mine and a pumpkin pound cake (that was delicious).  The pound cake was from scratch so she deserved to win....but mine was really good.  The next time I will use 2 boxes and add just a touch more pumpkin.
