4th of July Cake (Red,White, and Blue)





 What a gorgeous cake this is.  The perfect cake for a Fourth of July celebration or a birthday.  The recipe is below, but you can visit
 Recipe Girl to get more tips on 4th of July cake decorations.  Love the sprinkles and I know kids will.  That was one thing that my children loved when they were growing up.  Their cakes and  cupcakes had to have sprinkles.  I have to admit, they add a festive flair to any dessert.

Red, White and Blue Cake Recipe



Yield: 10 to 12 servings
Prep Time: 20 min
Cook Time: 20 min
A festive cake for a red, white and blue holiday celebration...

Ingredients:

  • 2 1/2 cups cake flour
  • 1 Tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 1/4 cups buttermilk
  • 4 large egg whites
  • 1 1/2 cups granulated white sugar
  • 1/2 cup (1 stick) unsalted butter
  • 1 teaspoon vanilla extract
  • red and blue gel paste coloring

Directions:

1. Center two racks in the oven and preheat oven to 350°F. Spray three 8 or 9-inch round cake pans with nonstick spray. Add a spoonful of flour to each, shake it around and tap out the excess.

2. To Make Cake: Sift together flour, baking powder and salt. Whisk together buttermilk and egg whites in a medium bowl. In a large separate, large bowl, use an electric mixer to blend together butter and sugar; beat at medium speed for a full 3 minutes, until the mixture is very light. Beat in the extract, then add one third of the flour mixture, still beating on medium speed. Beat in half of the buttermilk-egg mixture, then beat in half of the remaining dry ingredients until incorporated. Add the rest of the buttermilk and eggs, then add the last of the dry ingredients. Finally, give the batter a good 2 minute beating to ensure that it is thoroughly mixed and well aerated. Divide the batter evenly between three glass bowls. Color two of the bowls of batter- one dark red and one dark blue. Just add the color a little at a time until you reach the hue you'd like. Scoop each of the batters into their own prepared pan.

3. Bake for 20 to 25 minutes for 8-inch rounds (15 to 20 for 9-inch), or until the cakes have risen and are springy to the touch- a toothpick inserted into the centers should come out clean. Transfer cakes to cooling racks and cool for about 5 minutes, then run a knife around the sides of the cakes. Invert and cool to room temperature right side up on wire racks. When cooled, frost the cake as you would a 3-layer cake, frosting each layer before adding the next, and then covering the whole cake with frosting too.

How to Make Father's Day Cupcakes(Grill Food)


Cute cupcakes for Dad for any occasion, but especially great for Chef Dad on Father's Day. What dad wouldn't smile when he receives these special cupcakes for his special day.  See instructions below to make each grill looking cupcake.

Ingredients
  • Brownie batter
  • Black food coloring
  • White frosting
  • Orange sugar
  • Caramel creams
  • Red, yellow, and green candy fruit slices
  • Hot Tamales candies
Instructions
  1. To make a batch of 12, place liners in a muffin pan, oil them, and fill them two thirds full of your favorite brownie batter, then bake according to the recipe directions. Let the brownies cool.
  2. In a small bowl, mix one or two drops of black food coloring with 1/4 cup white frosting. Transfer the frosting to a ziplock bag and snip a small section from the corner. Pipe grate lines onto each brownie and let them set for 20 minutes. Add embers with a sprinkle of orange sugar.
  3. Prepare the grill food as instructed below and press it in place atop each brownie.

    Kebabs = A caramel cream and red, yellow, and green candy fruit slices, cut into small pieces + toothpick skewers

    Pork chop = two thirds of a caramel cream, molded with fingers + black food coloring, applied with a toothpick

    Hot dogs = Hot Tamales candies + black food coloring, applied with a toothpick

Fruit Kabobs for The Fourth of July

This  4th of July Idea is from Frugal Girls and I like it. I'm dieting and trying to add more fruit into my diet.  I have to trick myself into eating fruit .I  think  marshmallows may help. Anything with sugar helps.  We have a blueberry bush in our yard and I hate them, but with a marshmallow right behind it, I just may be able to swallow it.  They used colorful star marshmallows and it  really sets this dish off. To all fruit lovers, enjoy....to the rest of us good luck.

Pound Cake Looks Like Egg on Toast

   I love these fake food Ideas.  Here is a egg on toast that makes April Fools Day prank but also fun anytime. Check this site for other ideas.

What you need:
  • 1 slice pound cake
  • 1/4 cup vanilla yogurt
  • 1/2 apricot (from can)
What you do:
Toast the pound cake so the edges turn brown.
Then, take a tablespoon of vanilla yogurt and spread it slightly on the pound cake, to make it look like egg white.
Next, cut an apricot in half and place in the middle of the vanilla yogurt.
And, voila, it’s time to serve the kids Fake Fried Eggs On Toast for breakfast!

Pop Tarts Cookie Recipe

These cookies make with delicious pop tarts. Heaven on Earth.  Here is the recipe but visit her site for other great ideas. I'm making this for the concession my son runs for Relay for Life...we are predicting they will be a hit.  

  •  1 Box Frosted Raspberry Pop Tarts (or your favorite flavor)
  •   white chocolate chips (I used half of the bag but you can use as much as you like.)
  •   2 1/4 cups flour
  •   1 teaspoon baking soda
  •   1 teaspoon salt
  •   1 cup butter, softened
  •   3/4 cup brown sugar
  •   3/4 cup sugar
  •   1 teaspoon vanilla
  •   2 large eggs
Instructions
 
Preheat over to 325. (This is if you are using a muffin top pan. If you are not, preheat over to 375.)
  Combine flour, baking soda and salt in a small bowl. Set aside.
  Beat butter, sugar and brown sugar and vanilla until creamy. Add eggs, one at a time, beating well after each addition.
  Gradually beat in flour mixture.
  Stir in white chocolate chips.
  Then I crumbled up the pop tarts and folded them into the dough.

How to Make Delicious Baked Bananas

Here is an interesting recipe for a banana.  I never thought a baked banana would a"peel" to me but this sounds like something I could sink my teeth into....ooey gooey goodness for few calories. This recipe is from Joy the Baker who just has some of the greatest recipes and a sense of humor to match.

Here are the instructions on how to assemble and bake this surprising treat.

                              Baked Bananas
Makes:  one banana
  • 1 banana
  • 2 tablespoons dark chocolate chips
  • 1 tablespoons white chocolate chips
  • 1 tablespoon sweetened shredded coconut
  • 1 tablespoon roasted and salted peanuts
Place a rack in the center of the oven and place a baking sheet on the rack.  Preheat the oven to 375 degrees F.
Cut the head and butt of of a whole banana.  Slice lengthwise down the peel (not through the entire banana, just the peel) and open the peel, revealing just the top of the banana.
Stuff banana with chocolate chips, coconut  and cuts.  Wrap loosely in foil and place on baking sheet to cook for 15 minutes.  Remove from the oven and allow to cool for 5 minutes before unwrapping and enjoying straight from the peel.  Get in there.

How to Make Chocolate Strawberry Tuxedos






How adorable are these Tuxedo Strawberries?  This would be great for Bridal Parties or at a wedding reception. Here are the directions from  pastry chef  Elizabeth LaBau. Though the recipe seems long, it is only 4 basic steps. Love these.


Ingredients:

  • 1 lb large strawberries
  • 12 oz chocolate candy coating
  • 12 oz white chocolate candy coating

Preparation:

1. Prepare a baking sheet by lining it with aluminum foil or waxed paper and set aside for now. Wash the strawberries and dry them carefully, as excess water can interfere with the dipping process.
2. Melt the white chocolate candy coating in the microwave, stirring after every 30 seconds to prevent overheating. Stir until the chocolate is completely melted and smooth.
3. Dip a strawberry into the white chocolate until it is almost submerged, but leave about 1/2-inch of undipped berry at the top. Allow excess chocolate to drip back into the bowl, and scrape the bottom of the berry against the lip of the bowl to remove excess white chocolate that might pool around the bottom of the berry. Place the berry onto the foil-lined baking sheet, and repeat with remaining berries, until all have been dipped in white chocolate.
4. Place the dipped berries in the refrigerator to set the white chocolate while you prepare the dark chocolate for dipping. Place it in a microwave-safe bowl and melt it, stirring after every 30 seconds to prevent overheating. Stir until the chocolate is completely melted and smooth.
5. Once the white chocolate is completely set on the berries, take one berry and dip it into the dark chocolate at a 45-degree angle, so that the chocolate covers one side of the berry on the diagonal. Now turn it in the opposite direction and dip the other side on a 45-degree angle. The final result should be a berry that has a white "V" of chocolate showing through a darker outer coating.
6. Allow excess chocolate to drip back into the bowl, and scrape the bottom of the berry against the lip of the bowl to remove excess chocolate that might pool around the bottom of the berry. Place the berry onto the foil-lined baking sheet, and repeat with remaining berries, until all have been dipped in dark chocolate.
7. Now it's time to give your berries bow ties and buttons. To pipe these on, you can use a piping bag fitted with a small round attachment, a paper cone, or a plastic bag with the corner snipped off. Whichever method you choose, spoon some melted chocolate into your tool of choice. Make a bow tie by drawing two connected triangles at the top of the white V. Below this, place two or three dots for buttons. Repeat until all of your strawberries are decorated.
8. Place the tray back in the refrigerator to set the dark chocolate, for about 10 minutes. Your Tuxedo Strawberries are now ready to eat! They will keep in the refrigerator for several days, but I think they are best soon after they are made. If you do save them for 2-3 days, expect to see some condensation on them as they come to room temperat

Easy Fruitcake Recipe




I don't know why this fruitcake is called a Mexican Fruitcake but let me assure you it is delicious. This is my sister in law Jeannie's recipe  but I think it originally came from my mother in law who is a fabulous southern cook
When I was pulling it out of the oven I told my husband I forgot to flour the fruit, but as you can see the fruit is well distributed. This is a great cake to have during the holidays
when family and friends are dropping by. Here is the recipe :


Mexican Fruit Cake

  • 1 spice cake mix
  • 4 eggs
  • 2 cups applesauce
  • 1 container of mixed dried fruit 
  • 1 cup chopped dates
  • 1/2 cup raisins
  • 1 tablespoon vanilla flavoring
  • 4 cups chopped pecans
  • flour to dust fruit (about 2 to 3 tablespoons)


Mix cake mix, eggs, and applesauce in a large mixing bowl. Add vanilla and mix
Flour fruit and nuts and add to mixture
Grease and flour cake pan
Pour mixture into pans and bake at 275 degrees for 1 hour before opening the oven. Test with a toothpick.  When it comes out clean, it's done.


Donut Burgers

Unbelievable....using a doughnut as a hamburger bun. I've heard of sweet and salty, but sweet, salty and greasy....uck!!! Just my opinion but I wanted to share this new concoction that has surfaced...Paula Deen tried it too, adding an egg. Not sure if she had the burger on there too. This was the brain storm of a Decatur GA chef.

No Bake Petit Fours

This Christmas goodie is from the I Am Mommy site. These beautiful petit fours are make with cakesters
All you need is:
  • 1 box Oreo Cakesters
  • 1 package fondant (or you can make your own!)
  • Food coloring of choice


Simply roll   5 x 5 inch pieces of your favorite color of fondant, then place over the cakester. Smooth down the sides, cut off the excess, then tuck edges under.
Now, decorate to your hearts content!
This easy recipe is great for quick Christmas get togethers.

Smores Cupcakes

RECIPE FROM JENEECE:

Line 24 muffin/cupcake tins (I use the foil ones for this recipe)

Bottom crust:(Reserve about 1/2 of this mixture for later)
2 cup graham crackers, crushed
1/2 c sugar
4 Tbl melted butter

Place in a bowl and combine until you have a nice crumbly mixture. Put 1 Tbsp or so of this mixture in the bottom of the cupcake liners and press down until they are smooth and flat. Cook for 6 minutes at 350 degrees to slightly brown the bottom. After the bottom has been browned, fill cupcakes with almost 1/4 C cake mixture. Sprinkle left over graham cracker crumbs and small chocolate chips on top of cake mixture and then bake for 15-16 minutes at 350 degrees or until cake springs back when lightly touched with your finger.

Mixture for chocolate cupcakes batter:
1 pkg of chocolate cake mix (I use Betty Crocker)
1 cup sour cream
4 eggs
3/4 c oil
3/4 c water
1 pkg small dry chocolate pudding mix
1/2 c small chocolate chips

Let cupcakes cool completely before frosting.

Frosting:
8 large egg whites
2 c sugar
1/2 tsp cream of tarter
2 tsp pure vanilla extract

Place egg whites, sugar and cream of tarter in a heatproof bowl of an electric mixer (I use my kitchen aid bowl). Set over a saucepan with simmering water. Whisk constantly until sugar is dissolved and whites are warm to the touch (about 3-4 minutes).

Transfer bowl to the electric mixer fitted with the whisk attachment, and beat starting on low speed gradually increasing to high, until stiff glossy peaks form (about 8-10 minutes). Add vanilla and mix until combined. Pipe on to the cupcakes so they look like an ice cream on a ice cream cone. Take a creme brule torch and burn them to make them look like they have been toasted like a campfire. Makes 24 cupcakes

Easy Sticky Buns Recipe

I love recipes with just a few ingredients. I'm easily bored so reading through a recipe with 10 ingredients or more is not for me. Though I'm not a chef, I love to cook, but I also like easy.

Sticky Buns
  • 18 frozen dinner rolls dough balls
  • 1 small box butterscotch pudding (not instant)
  • 1/2 cup melted butter
  • 3/4 cup brown sugar
  • 1/4 cup chopped pecans (optional)

Lay rolls in a greased 9 x 13-inch pan. Sprinkle dry pudding mix over rolls. Mix brown sugar and butter and spoon over rolls. If desired sprinkle with pecans. Place in oven before going to bed. Bake at 350 degrees for 20 minutes. Flip onto wax paper and serve.

Ben & Jerry's Cherry Garcia Recipe (copycat)


This is my sons favorite ice cream ever. When he deserves something special (or thinks he does) this is his ice cream of choice. Great recipe for for Kids and Parents. Have some on a lazy Summer Day and Birthdays

  • 1/4 cup shaved semi−sweet chocolate bars
  • 1/4 cup fresh Bing cherries, halved and pitted (you may use canned cherries, but be sure to drain the syrup)
  • 2 large eggs
  • 3/4 cup sugar
  • 2 cups heavy or whipping cream
  • 1 cup milk
1. Place the shaved chocolate flakes and the cherries in
separate bowls. Cover and refrigerate.
2. Whisk the eggs in a mixing bowl until light and fluffy, 1
to 2 minutes. Whisk in the sugar, a little at a time, then
continue whisking until completely blended, about 1 minute
more. Pour in the cream and milk and whisk to blend.
3. Transfer the mixture to an ice cream maker and freeze
following the manufacturer’s instructions.
4. After the ice cream stiffens (about 2 minutes before it is
done), add the chocolate and the cherries, then continue
freezing until the ice cream is ready.

Cadbury Eggs Recipe



                                          Cadbury Eggs

Here is a recipe for those delicious Easter eggs that are so expensive and only available during Easter. With this Cadbury Egg Recipe, you can have them anytime of the year.
  • 1/2 cups light corn syrup
  • 1/4 cup butter softened
  • 1 teas. vanilla
  • 1/4 teas. salt
  • 3 cups powdered sugar
  • 4 drops yellow food coloring
  • 2 drops red food coloring
  • 1 − 12 oz. bag milk chocolate chips
  • 2 Tbls. shortening

Combine corn syrup, butter, vanilla and salt in large bowl. Beat well with electric mixer. Add sugar, one cup at a time, mixing by hand after each addition. Remove about 1/3 of the mix and place in small bowl. Add yellow & red coloring and stir. Cover both mixes and refrigerate at least 2 hours. When mixes are firm, roll a small ball from the orange filling and wrap around it a portion of the white filling that is twice that size. Form into the shape of an egg and place onto a cookie sheet that has been brushed with shortening. Repeat with remaining ingredients. Refrigerate 3−4 hrs. Combine chocolate chips with shortening in glass bowl. Microwave on high for 1 minute. Then stir and microwave another minute. Use a fork to dip each center into the chocolate. Place candy onto wax paper to dry. After 1−2 hours of chilling, dip each candy one more time and chill.

Bailey's Irish Cream Recipe (copycat)


                   Bailey's Original Irish Cream

Here is a recipe for Bailey's Irish Cream..just in time for St Patrick's Day. This is just like the Original Bailey's Irish Cream.
  • 1 cup light cream 1 can sweetened condensed milk (14 oz.)
  • 1 2/3 cups Irish whiskey
  • 1 teaspoon instant coffee
  • 2 tablespoons chocolate syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract

Combine all the ingredients in a blender and blend at high speed for about 20 seconds. Transfer to a clean bottle with a tightly fitting cap. Store, refrigerated, and shake well before using.

Girl Scout Mint Cookie Recipe




We can't always get our hands on them when the craving hits. Here is a Recipe for Girl Scout Mint Cookies.

Girl Scout Mint Cookies

  • 1 box Devil's Food Cake Mix
  • 2 Eggs
  • 2 Tbl. Water
  • 2 Tbl. Cooking Oil
  • 1/2 Cup Cocoa
  • 1 pkg. Chocolate Chips
  • 2−3 drops Wilton's Candy Mint Flavoring
Preheat oven to 400 degrees. Combine cake mix, eggs, water, cooking oil, and cocoa, You will need to blend this together well, this will be very sticky.

 Let stand for 20 minutes, and then shape into very
small 1/2 inch balls. Place these balls on a cookie sheet 2 inches a part, and smash down flat.  You will need to spray a large spoon with Pam to make them flat.
 Bake for about 8 minutes. Let cool until they reach
room temperature.
Heat chocolate chips in either the microwave, or in a double boiler.
When completely melted add a couple drops of the mint flavoring.
Be careful not to add too much, it is a powerful flavoring.
You can either spread the melted chocolate on the cookies,
or you can dip the cookies into the chocolate.

Delicious Apple Pie Recipe




Today my son surprised me with an Apple Pie instead of the traditional birthday cake. The pie was so pretty when it came out of the oven. It was puffed and had a shiny pastry top. He used a technique he saw on Food Network (Alton Brown). I noticed it didn't fall like most Apple Pies. Here is how he made the Apple Pie"   
  • peel 2 or 3 cups  apples (coat with sugar and cinnamon) 
  • puree 2 of the apples and place them in a stainer over a bowl until a sugar syrup is released. This was used as the base for the filling. 
  •  use an egg wash for the top pastry (frozen pie shell) made from a whole egg and water.
I don't know why it made the pie taste better, the juices would be in there anyway, but something about this technique adds more flavor to the pie...or could it just be that it was made with such love. Either way, It was delicious!

Fruit Salad Recipe (Semi Fresh)

 
 I don't particularly like fruit as I have mentioned, but this is how to make fruit salad  that is tasty and  simple.


  • 1 can of tropical fruit (Do Not Drain )
  • 1 can fruit cocktail (Do Not Drain )
  • 1 chopped apple (with skin for color and nutrients)
  • 1 cut up banana
  • 1 cup up orange
  • About 1/3 cup free vanilla pudding (instant) dry mix

You can use any type of fruit you choose but I find this to be a good combination. Pour the canned fruit into a large bowl and add the cut up fresh fruit. Next mix several spoons of the pudding into the fruit...I don't use the whole pack because I don't want a thick sauce but just a sweet sauce to cover the fruit. You can make several bowls of this with one box of the pudding. The juices in the canned fruit keep the bananas from turning brown.
This easy to make fruit salad is delicious when chilled if you can keep it around that long.
