Snacks for Road Trips

How cool is this snack on the go?  I found a site that gives you several snacks that are very portable and they are made from jars and containers we all have laying around.  Honestly, this picture made me want to eat peanut butter and celery, which I don't even like.   This site, Choose to Thrive has some frugal tips for the family on the go... carrots and dip, apples and dip....so  now I'm off to cut those those celery sticks and find a peanut butter jar....my husband will love this idea for his lunch, and the good part is he's going to think I'm so smart.

Easy Smores

I'm looking for Recipes that will help with my dieting efforts. I found this smores recipe that can be done in your kitchen during the cold winter months. This calls for bittersweet chocolate chips which is better for you than the chocolate bars.
This is a great treat for kids.
Here is how it is done. The recipe comes from the Eating Well website.

  • 2 whole graham crackers, broken in half
  • 4 marshmallows
  • 2 tablespoons bittersweet chocolate chips, melted

Preparation

  1. Position oven rack in the upper third of the oven; preheat broiler.
  2. Place graham cracker halves on a baking sheet; top each with 1 marshmallow. Broil, with the oven door ajar and watching carefully, until the marshmallows are golden brown, 45 to 75 seconds. Remove from the oven and drizzle each S’more with a little melted chocolate.

Tips & Notes

  • Tip: To melt chocolate: Microwave on Medium for 1 minute. Stir, then continue microwaving on Medium in 20-second intervals until melted, stirring after each interval. Or place in the top of a double boiler over hot, but not boiling, water. Stir until melted.
